This pasta salad is a dream go-to for spring. Seriously, it's bursting with flavor, loaded with veggies, and incredibly easy to make! Feel free to get creative and add other flavors or serve it alongside some chicken for a complete meal. Once you make this, you've basically got a whole meal done. It's so, so good and keeps well too. Trust me, I'll be enjoying this for quite some time!

Ingredients


Pasta: 

  • 8 oz spiral pasta
  • 1/2 red onion, thinly sliced
  • 1 cucumber, diced
  • 1/2 cup pitted olives, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 cup mozzarella cheese, diced
  • 1/2 cup artichoke hearts, chopped
  • 1/4 cup fresh parsley, chopped

Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Directions

Step 1

Cook spiral pasta according to package instructions. Drain and let it cool.

Step 2

In a large bowl, combine cooked pasta, with chopped red onion, cucumber, olives, cherry tomatoes, sun-dried tomatoes, mozzarella cheese, artichoke hearts, and parsley.

Step 3

In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, salt, and pepper to make the dressing.

Step 4

Pour the dressing over the pasta salad and toss until well combined.

Step 5

Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Serve chilled and enjoy your delicious pasta salad!
